X-mas cookies in progress
Maureen and I started making our annual special Christmas cookies on Saturday.
This year we are making:
Peanut butter bon-bons
Swedish Thumbprints
Pizzelles
Rum Balls
Coconut Macaroons
Incredible Fudge
On another note, I reminded myself that winning a race doesn’t mean a won race.
Cookie making didn’t start out so well, as we gradually realized that the recipies had gotten packed into Maureen’s storage pod. We hunted around for a bit unsuccessfully. Finally, I reconstructed the recipies from a spreadsheet we have used in previous years to calculate ingredient quantities. 53 cups of powdered sugar, yikes!
We made and rolled all the peanut butter centers for the bon-bons this weekend. Maureen managed to dip them all in chocolate tonight, so they’re nearly done.
Sunday night we made up half the dough for the Swedish Thumbprints, rolled them into balls, dipped them in chopped nuts, squished, filled, and baked them. Half down!
I made one quarter of the pizzelles today. Babysitting the pizzelle iron is somewhat tedious. I also managed to burn myself, when I became distracted once.
We’ll continue in spurts throughout the week, and try to wrap it up next weekend.
In the meantime, I have a paper to revise…
